How to Add Acai Bowls to Your Cafe Menu: Cost Per Bowl, Storage & Wholesale

To add acai bowls to a cafe or smoothie shop menu, the simplest setup is a 3-gallon scoopable pail: it yields about 48 bowls at an 8oz base portion, needs no blender, and works out to roughly $2.60–$3.13 of acai per bowl at our current online prices. Below is the cost math, what you need for freezer storage, a simple prep line, and how to order wholesale.

Pick a format that fits your volume

We sell acai for foodservice in two main formats. Both make a good bowl. The difference is labor, equipment and how many bowls you sell in a day.

  • Scoopable pails (3 gallons). Ready-to-scoop acai you portion with a standard ice cream scoop, like a sorbet. No blender, no thawing between orders. The acai scoopable is the core product, and the same pail format comes in coconut, dragon fruit and banana nut.
  • Frozen packets (100g). Unsweetened acai pure or lightly sweetened acai + guarana, sold by the pouch (4 packets) or case of 10 pouches (40 packets). You blend 2 packets with a banana and a splash of liquid per bowl. This works if you already run blenders for smoothies and only sell a few bowls a day.

If acai bowls will be a real menu category, the pail is usually the better fit. Scooping is faster than blending, every portion is the same 8oz, and you don't tie up a blender during a rush.

Cost per bowl: the math

These numbers use current prices on acaiexotic.com and count only the base, not toppings, cups or shipping. Wholesale pricing for regular accounts is quoted separately (see the ordering section below).

Product Price Servings Base per bowl Cost per bowl
Acai scoopable, 1 pail $150.00 ~48 8oz scoop about $3.13
Acai scoopable, 2 pails $250.00 ~96 8oz scoop about $2.60
Dragon fruit scoopable, 2 pails $250.00 ~96 8oz scoop about $2.60
Coconut scoopable, 1 pail $125.00 ~48 8oz scoop about $2.60
Coconut scoopable, 2 pails $200.00 ~96 8oz scoop about $2.08
Acai pure packets, case of 10 pouches $74.99 20 2 packets (200g) about $3.75

To turn that into a menu price, add your toppings and packaging, then divide by the food cost percentage you aim for. For example, if one 8oz acai scoop ($2.60) plus granola, banana, berries, a drizzle of honey and a bowl comes to about $4.00, a $12 bowl runs at roughly 33% food cost. Your topping costs will vary, so plug in your own numbers.

A few things the table doesn't show:

  • Yield depends on portioning. 48 bowls per pail assumes a consistent 8oz scoop. Use a portion scoop and train everyone on it.
  • Packets add labor and a banana. Each blended bowl takes longer and uses fresh fruit and liquid on top of the acai cost.
  • Shipping and order size matter. There's a $50 minimum on online orders, and shipping depends on your state. Two-pail orders spread shipping across more bowls.

For home-size comparisons, including bowl bases and single packets, see our post on how much acai goes in one bowl.

Freezer space and storage

Scoopable pails are built around two temperatures:

  • Active service at 10°F. Keep the pail you're scooping from in a dipping cabinet or freezer set to about 10°F. At that temperature it stays at ready-to-scoop consistency, so you don't need to temper it between orders.
  • Backstock at 0°F or below. Keep extra pails in your main freezer. If you pull a pail straight from 0°F, give it 10–15 minutes to temper before the first scoop.

Each pail is 9.66" across and 11.66" tall, and 3–4 pails fit on a standard commercial freezer shelf. A simple setup is one active pail per flavor at 10°F, with one or two backups per flavor at 0°F, then rotate a backup forward when the active pail runs low.

Packets and pails should both stay frozen until use. Thawed acai should be served right away and not refrozen, so portion before thawing to cut waste.

A simple prep workflow

A scoopable bowl takes four steps:

  1. Scoop. Portion 8oz from the active pail into the serving bowl with a standard ice cream scoop.
  2. Top. Add your house toppings. Granola, sliced banana, strawberries, blueberries, coconut flakes, nut butter, chia seeds and honey are the usual line.
  3. Serve. Hand it off. No blender to rinse between orders.
  4. Reseal. Close the lid and return the pail to the freezer right after scooping.

Some ideas for building out the menu from the same pails:

  • Layered or half-and-half bowls. Pair acai with dragon fruit scoopable or coconut scoopable for a two-color bowl without a second blender.
  • Smoothies. Scoop into a blender with almond milk, coconut water or juice.
  • Soft-serve. Let the product melt slightly and pour it into a standard soft-serve machine.

Topping prep is where most of the time goes. Slice fruit and portion granola before opening, keep toppings in a cold rail next to the dipping cabinet, and you can keep the line moving in a rush.

Sweetened or unsweetened?

The acai scoopable is made with organic acai, filtered water and raw cane sugar, so it's lightly sweet and ready to serve as is. Acai pure packets have no added sugar, which suits shops that want to control sweetness with fruit or honey. Unsweetened acai tastes earthy and only slightly tart, so most customers prefer a sweet topping on a packet-based bowl.

How to order wholesale

You can buy pails online at listed prices to test the product. For a regular account, you have two routes, both listed on our wholesale and private label page:

  • Through a foodservice distributor you may already buy from.
  • Direct from us using the contact form on that page. Wholesale pricing is based on order size and frequency.

When you reach out, it helps to share your expected weekly bowl count, which flavors you want, and your freezer setup. That lets us suggest a pail count and delivery schedule.

Online orders ship Monday through Wednesday so frozen product doesn't sit in transit over a weekend, and every box ships with dry ice.

FAQ

How many acai bowls do you get from a 3-gallon pail?

About 48 bowls at a standard 8oz base portion. Actual yield varies a little with how you portion.

Do I need a blender to serve acai bowls?

Not with scoopable pails. You portion them with an ice cream scoop straight from a 10°F freezer. Frozen packets do need a blender.

What temperature should I store scoopable acai at?

Keep the pail you're serving from at about 10°F so it stays scoopable, and keep backup pails at 0°F or below. Temper a pail from 0°F for 10–15 minutes before the first scoop.

What does an acai bowl cost to make for a cafe?

At our current online prices, the acai base runs about $2.60–$3.13 per 8oz bowl from scoopable pails. Add your own topping, cup and shipping costs to get your full plate cost.

How do I set up a wholesale account?

Order through a foodservice distributor or contact us directly through the form on our wholesale and private label page.
