How to Store and Thaw Frozen Acai: Packets, Bowl Bases and Scoopable Pails
Store all frozen acai at 0°F or below as soon as your box arrives, and keep it frozen until the moment you use it. To thaw a frozen acai packet, run the sealed packet under warm water for about 30 seconds, then blend right away. Bowl bases don't need thawing at all, and scoopable pails stay ready to scoop at 10°F. Here's how to handle each format, from delivery day to the blender.
When your order arrives
Every order ships with dry ice so the acai stays frozen in transit, and we only ship Monday through Wednesday so boxes don't sit in a warehouse over the weekend. When the box lands:
- Unpack it right away. Move everything into the freezer as soon as you can, even if you plan to make a bowl that day.
- Handle dry ice with gloves or a towel. Don't touch it with bare hands, and let any leftover dry ice evaporate in a well-ventilated spot rather than a closed cabinet.
- Check that everything is frozen solid. If anything arrives thawed, partially melted or damaged, email support@acaiexotic.com with your order number and photos of the package and products, and we'll arrange a replacement.
How to store frozen acai
The rule is the same for every product we sell: keep it at 0°F (-18°C) or below. A few habits make that easier at home:
- Use the back of the freezer, not the door. The door warms up every time it opens, which can soften packets around the edges.
- Keep packets in their pouch. Each acai packet is individually sealed, so you can pull one or two at a time and leave the rest untouched.
- Portion before you thaw. Thawed acai should be eaten right away, so only take out what you'll use. We don't recommend refreezing, because it changes the texture and flavor.
Storage and thawing by product
Each format is designed to be handled a little differently. Here's a quick reference:
| Product | Store at | How to thaw or prep | After thawing |
|---|---|---|---|
| Acai pure or acai + guarana packets (100g) | 0°F or below | Sealed packet under warm water for about 30 seconds, then blend | Use immediately, don't refreeze |
| Smoothie bowl bases (8oz in a pint) | 0°F or below | No thawing needed. Top straight from the freezer, or rest 2–3 minutes for a softer texture | Eat within 24 hours |
| Ready-to-eat acai bowls (8oz) | 0°F or below | 15 minutes on the counter, or remove the lid and microwave for 30 seconds | Eat within 24 hours |
| Scoopable pails (3 gallons) | 10°F for active service, 0°F or below for backup | Scoop directly at 10°F. From 0°F, temper 10–15 minutes before the first scoop | Reseal and return to the freezer right after scooping |
| Diced dragon fruit (500g) | 0°F or below | Sealed pouch under warm water for 30 seconds for blending, or 10 minutes at room temperature for snacking | Use within 24 hours, don't refreeze |
How to thaw an acai packet (and get the texture right)
Packets like acai pure are frozen solid, so they need a short warm-up before they'll blend. The method:
- Warm the sealed packet. Hold it under warm running water for about 30 seconds. Keep it sealed so no water gets in.
- Snap it in half. Break the packet into pieces and drop them into the blender.
- Add a little liquid and fruit. For a bowl, use 2 packets with a banana and about 2 oz of almond milk, coconut water or juice.
- Blend on high for about 30 seconds, until smooth and scoopable. Then top and eat.
Thaw time is the easiest way to control texture:
- 15–20 seconds keeps the acai colder and thicker. Best for a dense, spoonable bowl, but your blender will work harder.
- 30–45 seconds makes blending easier, with a slightly thinner result.
- For a drinkable smoothie, use the same thaw and add about ½ cup of liquid instead of 2 oz.
If the blender stalls, add liquid a tablespoon at a time. Frozen banana or mango thickens a bowl without watering it down. For portion and cost math, see our guide to how much acai goes in one bowl.
Bowl bases: no thawing needed
The acai smoothie bowl base is made to be eaten straight from the freezer. Peel the lid, add toppings right in the pint, and eat with a spoon. Straight out of the freezer gives you the firmest texture, which works well with warm toppings like honey or heated granola. If you'd like it softer, let the pint sit at room temperature for 2–3 minutes before topping. The coconut and dragon fruit bowl bases work the same way.
Ready-to-eat bowls: counter or microwave
Our ready-to-eat bowls, like the almond butter crunch acai bowl, come with toppings already layered in. Leave one on the counter for about 15 minutes, or remove the lid and microwave it for 30 seconds. For a firmer, icier texture, stop at about 10 minutes on the counter. Because it thaws in the container, it travels well in a bag or cup holder on the way to work.
Scoopable pails: storage for cafes and big households
The acai scoopable pail is built around two temperatures. Keep the pail you're serving from at about 10°F, where it stays ready to scoop with no tempering between orders. Keep backup pails at 0°F or below, and give a pail pulled from 0°F 10–15 minutes before the first scoop. Each pail is 9.66" across and 11.66" tall, and 3–4 fit on a standard commercial freezer shelf. Reseal the lid and return it to the freezer right after scooping.

Common mistakes to avoid
- Thawing a whole pouch "to save time." Thaw only the packets you're about to blend.
- Opening the packet before warming it. Warm water on an open packet waters down your acai.
- Microwaving packets. The microwave instructions are for ready-to-eat bowls only. Packets thaw best under warm water.
- Refreezing thawed acai. It won't blend or taste the same. Eat it, or blend it into a smoothie right away.
- Leaving a scoopable pail out between scoops. Reseal it and put it back in the freezer right after portioning.
FAQ
How do you thaw frozen acai packets?
Run the sealed packet under warm water for about 30 seconds, snap it in half, and blend it right away with a banana and a splash of liquid. A shorter thaw (15–20 seconds) gives a thicker bowl, and a longer one (30–45 seconds) blends more easily.
Can you refreeze acai after it thaws?
We don't recommend it. Refreezing changes the texture and flavor, so thaw only what you'll use and eat it right away.
Do I need to thaw an acai bowl base?
No. Smoothie bowl bases are ready to top straight from the freezer. Let the pint sit for 2–3 minutes if you'd like a softer texture.
How long does frozen acai last in the freezer?
Our acai packets and bowl bases list 24 months frozen at 0°F or below on their product pages. Check the page for each product, and once anything is thawed, eat it right away.
What temperature should I store scoopable acai at?
Keep the pail you're serving from at about 10°F so it stays scoopable, and keep backups at 0°F or below. Temper a pail from 0°F for 10–15 minutes before the first scoop.
